Cod with Sherry Sauce
Ingredients
Kosher salt
1 tablespoon smoked paprika
2 tablespoons fresh lemon juice

1 tablespoon extra virgin olive oil

1/2 cup sweet sherry
1 (36 ounce) cod fish fillets, with skin
Directions
Get a knife and make a 2 1/2″ long, 3 1/4″ deep diagonal slice in the cod fillet. Position the fillets in one layer with the skin side up in a glass baking dish. Pour 1/4 cup olive oil and sherry over the fillets. Spray it with some pepper.
Cover the container. Before you continue with this baked black cod recipe, store the container in the fridge for 6 hours. Turn it over every so often.
Preheat your oven to 425 degrees F. Mix the garlic and butter in a saucepan. Keep cooking over medium heat until the garlic turns brown and the butter melts. Stir it occasionally. This should take 12 minutes or so. Remove the garlic cloves.
Add the bread crumbs to the butter. Cook for three minutes. Pour in the lemon juice. Remove it from the heat. Stir the smoked paprika into the mix. Add pepper and salt. Keep this sauce warm by covering it.
Remove the cod from the marinade. Top the fish with salt. Heat the other tablespoon of oil in an oven-resistant skillet at medium high heat. Put the cod with the skin side facing down. Keep cooking until the cod turns brown. This should take a minute.
Flip the fillets over. Put the skillet in your oven. Roast the cod for 2 minutes or until it turns opaque.
Tips for Making Other Cod Recipes
To serve with sweet and sour onions, spoon the onions in the middle of half a dozen plates. Top each one with a cod fillet. Spread the sauce over it. You can make other cod recipes by using different marinade sauce and adding veggies. You can also broil the cod.
If you are pressed for time, you can store the marinade for this baked black cod recipe for just four hours. However, six hours of fridge storage time will produce the best results. No matter how long it is stored, remember to turn it over every now and then.
