Cod with Grated Parmesan Cheese
Ingredients
1 tablespoon vegetable oil
1/2 tsp dried basil
1/4 cup grated Parmesan cheese
1/2 cup seasoned bread crumbs
1/2 cup chopped green pepper
2 large sliced tomatoes
1 medium onion, chopped
1 lb of cod fillet
2 tbsp of orange juice

1 ½ cups of water
Directions
Mix the orange and water in a container and dip the fillet in it for 7 minutes. Drain the fillet and place it in a coated baking dish. Spray some pepper and salt on it. Add the green pepper, onion and tomatoes on the fillet.
Mix the other ingredients and place them over the fish. Bake this dish uncovered for 20 to 30 minutes at 375 degrees F, or until the cod flakes with ease.
Cod with Hot Salsa and Rice
Ingredients

2 ½ cups of salsa
2 tablespoons fresh parsley, chopped
1 ½ lbs of cod fillets
Directions
Preheat your oven up to 350 degrees F (equal to 175 degrees C). To start this baked cod fillet recipe, rinse the fish and dry it. Grease a casserole dish and place the cod there. Sprinkle the salsa over it. Top it with parsley. Flavor with as much salt and pepper as desired. Bake this for half an hour. The dish is best served with warm rice.
Cod with Cheese and Crumbs
Ingredients
1 cup of bread crumbs
4 (3 ounce) fillets cod fillets
1/8 tsp ground black pepper
1/8 tsp garlic powder
1/4 tsp Italian seasoning
1 tsp olive oil
½ tbsp of cornmeal
Salt
1 tbsp of parsley, chopped
1 ½ tbsp of grated cheese
Directions
Get a bowl and mix the parsley, pepper, seasoning, garlic powder, bread crumbs, cornmeal and grated cheese. Preheat the oven to 450 F. Position the fish in a broiling pan. Distribute the mixture over the fillets. Bake for 10 to 15 minutes.
Note: the cooking time of these recipes may vary depending on how many fillets you bake. You can easily tell if they are ready by checking the fish. Get a fork and flake the fish. If it does easily, it is already done.
