Cod with Parsley
Ingredients
Refrigerated butter-flavored spray
1 tablespoon reduced fat ranch salad dressing
2 (6 ounce) fillets cod
1 tablespoon minced fresh parsley
1 cup seasoned stuffing croutons, crushed
Directions
Get a shallow bowl and combine the parsley with crushed croutons. Apply some salad dressing to the cod. Use the crumb mixture as coating. Add some butter to the cod. Put this into a baking dish measuring 11-in. x 7-in. x 2-in.

Cod with Red Pepper
Ingredients
Garlic pepper seasoning
1 cup crushed Cajun-seasoned snack mix
4 big cod fillets (rinse these in advance)
8 dashes of Worcestershire sauce
1 cup horseradish sauce
1 (6 ounce) jar roasted red peppers (these should be drained and dried before being diced)
Directions
Preheat your oven at 375 degrees F (190 degrees C). Put the red peppers in a food processor, as well as the Worcestershire sauce and the horseradish sauce. Pulse the ingredients until they turn smooth. Pour one-fourth of the pepper sauce in a 13 x 9 inch baking dish.
Spread the sauce evenly so the bottom is coated well. Place the cod in this dish. Spray some garlic pepper on it. Pour the remaining sauce over the fish. Sprinkle the Cajun mix on top of it. Bake this in the oven for 20 to 25 minutes or until the crumbs begin to brown.

Ground black pepper
1 (14.5 ounce) can diced tomatoes drained (with onion and garlic)
1 (4 ounce) pack Boursin cheese with herbs (room temp)
2 lb cod fillet
2 tbsp of melted butter
Directions
Preheat the oven to 400 F. Put a tbsp of the butter on the baking dish. Spread it out. Add the cod fillets. Place the Boursin cheese over the fillets. Sprinkle the tomatoes over it. Sprinkle some salt and pepper. Add some Parmesan cheese and top with 1 tbsp of butter. Bake for 25 minutes uncovered.
