If you’ve never tried preparing a baked ling cod recipe, here is a dish to help you get started. This will give you an idea of the possibilities inherent with ling cod.
Ling Cod with Lemon Butter Sauce
Ingredients
2 lb fillet of ling cod
Pepper and salt
Olive oil
For the sauce:
1 tbsp lemon juice
1 teaspoon white pepper
1 teaspoon salt
3/4 lb (3 sticks) unsalted butter
1 tbsp flour
1 tbsp unsalted butter
1/2 bay leaf
1 tbsp minced shallots
1 tbsp minced garlic
1/2 cup whole milk
1/2 cup dry sherry
1/2 cup clam juice
Note: the sauce ingredients will produce twice the amount of sauce needed for the cod amount mentioned. Store the rest or use it for other vegetables and food.
Directions
To make the sauce for this baked ling cod recipe, reduce the bay leaf, shallots, garlic, whole milk, sherry and clam juice by half in a saucepan. To prepare the roux, get another saucepan (1 qt at least) and heat a tablespoon of butter in it (medium heat).
When the butter gets foamy, spray some flour in it. Use a metal whisk to stir it. Mix it well but not browned. Add the reduced mix into this saucepan, stirring it quickly as you add.
Set the heat to low. Slowly whisk the butter in, a couple of tablespoons at a time. Add the white pepper, salt and lemon juice. Add some stock if the sauce gets too thick.
To Cook the Fish
To prepare the cod, arrange the oven so when the cod is on the baking pan, it’s 5 inches from the heat. Preheat the oven to 350 F. Rinse the cod in cold water and slice into two 1 lb pieces. Use fish bone tweezers to remove the fish bones.
Place an aluminum foil in the baking pan. Put the cod there. Rub some olive oil on the sides of the fish. Sprinkle pepper and salt on the sides.
Bake this for 15 to 20 minutes. To determine if the cod is done, use a knife’s tip to make an incision on the thickest section of the fillet. If the center has gone from translucent to opaque, the cod is cooked. If it isn’t, the fish has to be cooked some more.
