Breaded baked cod recipes don’t have to taste the same. The following recipes will demonstrate the different ways this recipe can be prepared.
Cod with Sweet Hungarian Paprika
Ingredients
1 1/2 tbsp unflavored, fine, dry bread crumbs
1 1/3 cup half and half
2 large eggs, lightly beaten
3 tbsp chopped fresh dill
3/4 tsp sweet Hungarian paprika
Salt
Freshly grounded pepper
1/2 lb fresh, white mushrooms (sliced ands wiped clean)
2 large onions, sliced
All-purpose flour
1 lb cod fillets (sliced into 1 inch pieces)
7 1/2 tbsp unsalted butter
4 large baking potatoes with skin
Directions
Boil the potatoes in salted water (don’t remove the skin). Cook for 20 to 25 minutes until they get soft. Drain and cool it. Peel the potatoes and chop the potatoes ¼ inches thick. Melt 3 tbsp of butter in a skillet at medium heat.
Roll the cod fillets in the flour. Fry the fish until they turn opaque and gold. Put three tablespoons of butter in another skillet at medium heat. Put in the mushrooms, onion and sauté it. Stir every now and then. Keep stirring until the mushrooms reabsorb the liquid and the onions get colored. This should take about 15 minutes.
To proceed with this breaded baked cod recipe, preheat the oven to 350 degrees F. Line three quarters of the potato slices in an ovenproof casserole. Top the potatoes with half the dill, 1/4 teaspoon paprika, pepper and salt.
Add a layer of onions and mushrooms over the potatoes. Add the same amount of paprika, salt, pepper and dill. Put all the cod in the casserole. Flavor it with salt and pepper. Position the potatoes in a circle round the casserole.
Whisk the eggs and half and half. Pour this mix on the fish. Top it off with ¼ tsp of paprika and the bread crumbs. Add 1 ½ tsp of butter over it. Bake for 20 minutes.
Cod with Mayonnaise
Ingredients
Bread crumbs
Salt and pepper
2 tbsp mayonnaise
2 raw eggs
1/2 tsp Worcestershire sauce
1 bunch parsley, chopped
3 tbsp Old Bay Seafood Seasoning
1 tsp baking powder
5 slices white stale bread, chopped into squares
2 lb of cod
Directions
Cook the cod in a microwave until the color changes. Mix all the ingredients and mold into small cake shapes. Add the bread crumbs and fry in oil.
When you make these breaded baked cod recipes, remember that you can change the slice thickness or the size of the cake shapes. But this may affect the cooking time.
