Cod with Cheese
Ingredients
Chopped coriander
6 garlic cloves, chopped
1 tablespoon of olive oil
A can of chopped tomatoes with juice
Cod loin fillet
2 oz cheddar cheese
Salt
½ tsp of sugar
Freshly grounded pepper
Instructions
Heat the oil in a deep frying pan. Toss in the garlic. Stir it for a couple of minutes. Do not let the garlic turn brown. Throw in the tomatoes, pepper and salt. Let it simmer.
Let it cook for 60 minutes, stirring it every now and then. The mixture will be thick. Add the sugar and coriander. Keep stirring. Take the pan from the heat.
Preheat the oven to 200 F. Pour half of the sauce in a baking dish. Place the cod fillet over it. Cover the cod with the remaining sauce. Put the dish in the oven.
Bake for 40 minutes. When it is done, remove the dish from the oven. Top the cod with cheese. Put it back in the oven and bake for five minutes. The cheese will melt. This cod recipe with tomatoes and coriander can be served with vegetables.
Cod Indian Style
Ingredients
1 tsp of ground of coriander
3 tablespoon vegetable oil
Salt and pepper
1 tsp of ground cumin
1 tsp of ground garam masala
4 cod fillets an inch thick each
2 garlic cloves, chopped
1 tsp of ground turmeric
2 tbsp of fresh coriander
¼ pint of coconut milk
1 bell pepper (red, chopped and seeded)
400g of tomatoes, chopped
Instructions
Put oil in the frying pan and heat it. Add the cod and sprinkle some salt and pepper. Keep frying until both sides turn brown. Take it off the pan. Set aside.
Put the onion and other spices in the pan. Cook them for a couple of minutes. Toss in the tomatoes. Stir it often. Let it simmer and boil for five minutes.
Add the cod to the pan. Allow it to simmer for 10 minutes. Remove from the pan. Put it in the serving dish and keep it warm. Pour the coconut milk and coriander into the pan. Reheat it again. Pour the sauce on the cod.
Note: you can add some curry instead of garlic and onion.
Cod Roe with Onion
Ingredients
1 egg
Red onion, small
1 lemon juice
2 tomatoes
Pepper
2 tbsp of flour
Salt
250ml cold water
Coriander, chopped
1 lime juice
350 grams of cod roe
Instructions
Slice the tomatoes and onions and put them in a bowl. Toss in the coriander, lime, lemon, pepper and salt. Mix it. Whisk the egg and water in a bowl. Add more salt and pepper. Batter the cod and fry it. Serve the dish immediately.
