Coriander cod recipes may be prepared in various ways. Delicious and healthy, you can make these recipes with ease; only basic cooking knowledge is needed.
Cod with Lemon Juice
2 grated carrots (large)
1 chopped onion
Lemon juice and zest
Vegetable stock (600 ml)
2 tbsp of olive oil
2 tbsp of coriander (chopped)
4 cod fillets (skinless)
2 tsp of cumin seeds
Basmati rice (200g)
Salt and pepper
Instructions
Set your grill pan to high. Line it with double thickness foil. Fold the edges so the juices do not drip. Brush it with the oil. Place the fish on it. Sprinkle the coriander on it.
Spray some of the lemon zest and juice. Top it off with some oil. Sprinkle some salt and pepper. Grill for 10 minutes or until the cod flakes with ease.
Put some oil in a pan and heat it. Toss in the cumin and onion. Fry them for a couple of minutes. Add the carrots to this and keep frying. Add the rice and keep stirring until the rice starts to gleam. Pour in the vegetable stock.
Bring it to a boil. Put the lid on and cook for ten minutes. The rice will turn soft and soak in the stock. Serve the rice (this dish is good for four). Top it with the fish. Sprinkle the juices over the plates.
Note: you can add more veggies to this coriander cod recipe. You can put in peas, leeks, red pepper and others.
Cod with White Wine
Ingredients
4 cod fillets
Salt
Pepper
2 tbsp of lime juice
150 ml of white wine (dry)
2 oz butter
2 tbsp of coriander, chopped
Instructions
Preheat the oven to 425 F / 220 C. Grease the baking dish. Wash the cod and dry them. Place them in the dish. Flavor it with some pepper and salt.
Pour the white wine over the fish. Spread some butter over the fish. Cover it with aluminum foil. Bake the cod for 20 minutes. When it is done, put on the serving plate and top it off with the coriander and juice. This dish should be served after baking.
Cod with Risotto Rice
Ingredients
225g of risotto rice
Four 170g cod loins, skinless
1 tbsp of olive oil
Salt
Pepper
30 oz of chicken stock
5 tbsp of chopped coriander
Rind and juice of orange
1 medium onion, chopped
Instructions
Pour oil in a frying pan and heat it. Sauté the onion until it gets soft. Toss in the rind, juice and the risotto rice. Add in the other seasonings and coriander.
Keep stirring the mixture until the rice is covered. Pour in a pint of stock. Keep cooking until the stock is absorbed. Stir. Add another 4 oz of stock. Stir and add the cod. Put the cover and cook for 2 minutes. Serve the dish with some tomatoes.
You can add more vegetables and seasoning to these coriander cod recipes. In the recipes that use stock, feel free to add more if desired.
