Cod with Tabasco Sauce
Ingredients
Vegetable or olive oil
Pepper and salt
1 cup of finely ground saltines
1/4 cup of fine bread crumbs
1 scallion, thinly sliced
2 large eggs, beaten lightly
1 lb cod fillets
Tabasco sauce
Pinch of celery seed
1/2 tsp dried or minced fresh tarragon
1 tsp fresh lemon juice
1 1/2 tsp Dijon mustard
1 tbsp minced celery
3 tbsp minced onion
2 tbsp sweet pickle relish
3 tbsp minced parsley
1/2 cup of mayonnaise
Pinch of celery seed

To make the tartar sauce, mix the following in a bowl: tarragon, celery seed, lemon juice, mustard, celery, a tablespoon of onion, relish, the mayonnaise and a couple of tablespoons of parsley. Sprinkle some Tabasco sauce over it. Cover the container. Chill in the fridge for 48 hours before proceeding.
After poaching the fish, let it cool. To make this easy fried cod recipe, the fish has to be flaked thoroughly. Mix this with the bread crumbs, parsley, onion, scallion, eggs and a couple of tbsp of tartar sauce. Add as much pepper and salt as is necessary. Add the Tabasco sauce.
Combine the pepper, salt and the saltines. Get teaspoonfuls of the fish mix. Shape them into the balls. Roll these in the saltines. Heat 1 ½ inch of oil at 350 degrees F in a skillet. Fry the fish balls in groups. Cook each side for a couple of minutes. Place the fish balls in paper towels after cooking. Serve with the sauce.
Sandwich Cods
Ingredients
6 tbsp tartar sauce
Sandwich buns
Cooking oil
A cup of corn flakes or crumbs
A lightly beaten egg
A pound of cod fillets
Directions
Slice the cod into 3 inch squares half an inch thick. Immerse the fish in the egg and the crumbs. Fry the cod and heat the frying pan to 350 degrees F. Cook for 5 minutes each side. Put cheese on the sandwich and put the cod there. Add the tartar over the cod. Put the other half of the sandwich over it.
The cooking times indicated for these easy fried cod recipes can vary. If you cook bigger pieces, the cooking time will be much longer. You can also add or reduce the ingredients in the sauces. Do keep in mind that adding or reducing substantial amounts will affect the taste.
