Spicy Baked Cod

Ingredients

1/2 sliced red onion
1 wedged lemon
2 tsp chopped cilantro
2 tablespoons olive oil
2 teaspoons butter
5 (6 ounce) cod fillets

For the marinade:

1/2 teaspoon fresh-ground black pepper
1/2 teaspoon salt
1 teaspoon ground turmeric
2 tablespoons ground cumin
2 tablespoons ground coriander
2 1/2 tablespoons cayenne pepper
1 beaten egg
5 tablespoons lemon juice
1 teaspoon white vinegar
1 teaspoon soy sauce
2 tsp of canned pureed tomatoes
2 tablespoons tandoori masala paste (you can buy this in Indian food stores)
1 teaspoon ginger-garlic paste
2 tablespoons plain non-fat yogurt

Directions

Begin this healthy cod recipe by mixing the following ingredients in a bowl: pepper, salt, turmeric, cumin, coriander, cayenne pepper, egg, lemon juice, vinegar, soy sauce, tomato puree, tandoori paste, ginger-garlic paste and the non-fat yogurt.

Place the cod fillets in this bowl. Flip them over so both sides are coated. Put a lid on the bowl and keep it in the fridge for 60 minutes. Preheat your oven to 400 degrees F (200 C). Apply a teaspoon of olive oil and butter in a shallow baking dish. This is where the cod will be set.

Take the cod out of the marinade. Sprinkle it with olive oil and butter. Bake for 40 minutes or until it turns gold-brown. Serve with lemons, onions and cilantros.

Note: you can adjust the amount of ingredients that are used for the marinade; it’s a matter of personal preference. Feel free to add to the ingredients as you deem it fit.

Cod with Crumbs

4 (6 ounce) fillets cod
2 cups crushed stuffing mix
1 envelope Italian salad dressing mix
2 tablespoons water
2 tablespoons vegetable oil

Directions

Get a shallow bowl and combine the salad dressing mix, water and oil. Get another bowl and put the stuffing mix there. Immerse the fillets in the first bowl mix and then in the second bowl as well. Dip the cod well.

Put the cod in a baking sheet (make sure it is greased). Bake for 15 to 20 minutes at a temperature of 425 degrees F. The recipe is ready when the fish flakes without resistance with your fork.
