Quick and Easy Cod

Ingredients

1 tbsp salad dressing
2 (6 ounce) cod fillets
2 small green bell pepper, sliced
2 tbsp fresh parsley, minced
1 cup seasoned stuffing crouton (must be crushed)

Directions

Combine the parsley, peppers and croutons in a bowl. Use the salad dressing to flavor the cod. Coat the fish with the crumbs. Put the fish in a baking dish and bake at 400 F until the cod can be flaked easily. That should take 10 to 15 minutes of baking time.

Cod with Green Curry

Ingredients

A lb of cod
3 cloves garlic, diced
1/2 leek, thinly sliced
1 medium red onion, thinly sliced
1 medium green bell pepper, sliced
1 tbsp of olive oil
Salt and pepper
1 tsp dried dill weed
1 (12 ounce) can of green curry sauce
(8 ounce) can of coconut cream

Directions

Start this oven baked cod recipe by preheating the oven to 375 degrees F. Combine the pepper, salt, dill, curry sauce and coconut cream in a saucepan. Set it over medium low heat. Keep cooking until heated well.

Heat the oil in a skillet. Cook the garlic, leek, onion and pepper for five minutes. Place the fish in a baking dish. Add the rest of the vegetables. Put the coconut cream on top of it. Bake this for half an hour.

Cod with Shrimp

Ingredients

1 tablespoon chopped fresh parsley
1 tablespoon grated Parmesan cheese
1 lb cod fillets
Salt and pepper
1 tablespoon chopped fresh dill
1 cup sliced fresh mushrooms
½ lb fresh shrimp (de-veined and peeled)
1 1/2 tablespoons cornstarch
1/4 cup milk
1 1/2 cups heavy cream
1 tablespoon minced garlic
1/4 cup minced onion
2 tablespoons butter
1 teaspoon olive oil
1 cup uncooked long-grain white rice
2 cups water

Directions

Bring water to a boil in a saucepan. Stir the rice and lower the heat. Put a lid on. Let it simmer for 20 minutes. Preheat the oven to 350 F. Sauté the onion and garlic. Stir the cream. Combine the cornstarch and milk in a smaller bowl. Add this to the saucepan.

Take off the heat and add the mushrooms and shrimp. Add the pepper, salt and dill. Put the fish in the baking dish and top with cream and cheese. Bake for half an hour.
